Tofu Stir Fry with Teriyaki Sauce

Teriyaki Sauce

Ingredients
  • ⅔ cup low-sodium soy sauce or tamari, coconut aminos
  • 1 tablespoon cornstarch 
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon onion powder
  • 2 teaspoons garlic powder
  • ½ cup brown sugar
Cooking Instructions for the Sauce
  1. Mix the sauce ingredients together, except for the cornstarch. Set that aside for now.
  2. Reserve half of the sauce for marinating the tofu, and half for the stir fry.

Marinating Tofu

Ingredients
  • 1 (14-ounce) block extra firm tofu (pressed)
  • ½ of the prepared teriyaki sauce (prepared above)
Instructions for Marinating Tofu
  1. Slice the tofu.Then cut each slice into 4 triangles. Cubing it is also a good option if you like it that way.
  2. Place in a container or shallow bowl and pour in half of the teriyaki sauce. Toss gently so that each piece of tofu is coated.
  3. Let it marinate for 30 minutes (you can also leave it overnight in the fridge.) Toss or flip halfway.

Tofu Stir Fry

Ingredients
  • ½ yellow onion sliced
  • ½ cup sliced mushrooms
  • 2 large carrots sliced
  • 1 cup sugar snap peas
  • 2 bell peppers cored and sliced
  • 1½ cup broccoli florets
  • 2 tablespoons oil
Cooking Instructions for Tofu Stir Fry
  1. In a large pan or wok, heat 1 tablespoon of oil on medium-low heat. Add the tofu to the pan. Cook until browned on each side. Remove tofu from the pan and set aside for now.
  2. Add the remaining tablespoon of oil to the pan. Cook the sliced onion until translucent.
  3. Add in mushrooms and carrots. Cook until carrots are tender.
  4. Add broccoli, snap peas, bell peppers, and 2 tablespoons of water to the pan. Cook by covering with the lid until everything is just tender. Add more water if necessary.
  5. Whisk the cornstarch into the reserved teriyaki sauce. Add the tofu back into the pan along with the teriyaki sauce. Toss. Cook for another 2 minutes, or until the sauce has thickened and the tofu is warm again.
  6. Serve hot. You may garnish it with toasted sesame seeds or/and sliced green onion.
