Vegan Sweet Potato Waffles

Ingredients
  • 1 cup quinoa flour
  • 1/2 cup brown rice flour
  • 1/4 cup tapioca starch
  • 1/4 cup flaxseed meal
  • 2 tablespoons coconut sugar
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1 cup almond milk
  • 1 cup sweet potato puree
  • 2 tablespoons melted coconut oil or flax oil
  • 1 teaspoon vanilla extract
Cooking Instructions
  1. In a large bowl, whisk together the dry ingredients and set aside.
  2. Add flaxseed meal, sweet potato, oil,  vanilla and almond milk to a blender and beat on high setting until smooth.
  3. Add the wet mixture to the dry ingredients. Gently fold until the batter is just combined again. Careful not to over mix.
  4. Heat a waffle iron to medium-high. Grease it and drop 1/4 cup of batter into the center. Cook according to your waffle maker’s instructions until golden brown and lightly crispy; typically about 2 – 3 minutes.
  5. Transfer the waffle to a wire rack and repeat with remaining batter.
  6. When ready to serve, top with desired toppings and enjoy!
