Cheesy Herb Scones

Ingredients
For the scones
  • 2 cups (250 g) self-raising flour
  • ¾ cup sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • ¾ cup butter cut in cubes (if you are allergic to dairy products, use vegan butter or olive oil)
  • ½ cup grated Havarti cheese (skip this if you are allergic to dairy products or alternatively, soy cheese works as a great substitute)
  • ½ cup grated aged cheddar cheese (if you are allergic to dairy products, add an equal amount of nutritional yeast for the similar flavor and texture of the scones)
  • 40 g finely minced chopped wild garlic leaves
  • ½ tsp coarse black pepper
  • 2 tsp Italian herb seasoning dried
  • 1 cup soured milk (just add 1 tbsp lemon juice or plain vinegar to a cup of milk. Also, in case of dairy allergy, please add vegan yogurt, preferably coconut yogurt)
For the Lemon Dijon Mayonnaise
  • 1 cup mayonnaise
  • 1 tsp finely chopped lemon zest
  • 2 tsp lemon juice
  • 2 tbsp Dijon Mustard
  • 1 tsp sugar

If you are allergic to dairy or animal products found in store-bought mayo, please go for Vegan Lemon Dijon Mayo

Scones Recipe
  1. Combine the flour, baking powder, sugar, and salt in a food processor
  2. Pulse in the butter until the mixture resembles a coarse crumb or sand.
  3. Transfer it to a large bowl and stir in the cheeses, garlic, herbs, and pepper.
  4. Make a well in the center of this mixture and pour the soured milk.
  5. Mix to form a dough ball.
  6. Roll the dough to ½  inch thickness and cut out scones with a small cookie cutter or glass rim. Place them all on a baking sheet lined with parchment paper. (You may brush an egg wash over the tops if desired. For a non-dairy option, go for almond milk for the best results).
  7. Bake at 375 degrees F for about 12- 15 minutes or until an evenly light golden brown. Take them out to let them cool on a rack.
How to prepare the Lemon Dijon Mayonnaise:

Mix all the ingredients in a blender until thick and smooth.

To assemble the sandwiches

Split the scones and spread with the lemon dijon mayonnaise. (You may also fill the sandwiches with grilled vegetables of choice, thinly sliced and crisped mushrooms/meats, thin slices of tomato, shredded lettuce).
