Ingredients
  • 1 cup chopped veggies of your choice (pickled green beans, red bell pepper, green onions are used here)
  • 2 large large flour tortillas
  • 115 g cream cheese (softened)
  • ½ cup grated cheddar cheese
  • ⅓ cup mayo
  • ½ tsp garlic powder
  • ¼ tsp dried dill
  • ¼ tsp salt
  • 1 tsp ranch seasoning

How to Make Vegetable and Cream Cheese RollUps
  1. Chop your preferred veggies. Mince them extra small so there’s a little bit of everything in each bite.
  2. In a medium bowl, combine softened cream cheese, mayo, garlic powder, dill, salt and ranch seasoning.
  3. Microwave tortillas for 15-20 seconds to soften them. Spread the cream cheese mixture on them and sprinkle evenly with veggies, cheese, and green onion. (Alternatively, you may also choose to add the veggies and green onion to the cream cheese mixture above. That way everything will be in one spreadable mixture. Only sprinkle cheese on top after spreading that mix)
  4. Starting from the edge of the tortilla and roll it, tightly, until you reach the opposite side. Tip: Do not overstuff the cream cheese filling as it will ooze out.
  5. The cream cheese will help it stick. Fasten with a toothpick or two and refrigerate for 20 minutes to set.
  6. Slice into pinwheels and serve!
