Fruit & Veggie Skewers with Sweet-Spicy Sauce

Ingredients
Sweet-Spicy Sauce
  • 1 cup blueberries
  • 2 tablespoons pure maple syrup
  • 1 clove garlic, finely minced
  • 2- inch piece of ginger (peeled and minced)
  • 1 small onion, grated with a box grater
  • 1 tablespoon tomato paste
  • ½ teaspoon gluten-free tamari soy sauce
  • ¼ cup balsamic vinegar
  • Sprinkle of chili flakes (optional; you can adjust the spice with black pepper alone, too)
  • Sea salt and ground black pepper (to taste)
Grilled Vegetable & Fruit Skewers
  • 10-12 mulberries
  • 1 yellow bell pepper (cut into 1-inch square pieces)
  • 1 beetroot (cut into 1-inch square pieces)
  • 1 medium zucchini (cut into 1-inch round pieces)
  • 1 block of cottage cheese (cut into cubes of preferred size; if you are allergic to dairy products use tofu instead)

TIP: You can use varying vegetables like red onion or sweet potato cubes and fruits like peaches or pears if you wish to add variety or swap some from the list.

Barbeque Oil
  • Avocado or other high heat-tolerant oil spray
  • 3-4 tablespoon lemon juice
  • Sea salt and ground black pepper, to taste

Cooking Instructions
How to make blueberry barbecue sauce:
  1. In a medium saucepan, combine the blueberries, garlic, ginger, maple syrup, tomato paste, grated onion, tamari, balsamic vinegar, salt, black pepper, and chili flakes (or use an equal amount of black pepper).
  2. Set the pot over medium heat and stir.
  3. Bring the sauce to a boil and then simmer until blueberries are broken down and sauce is slightly thickened (about 10-12 minutes).
  4. Set aside.
How to make skewers at home:
  1. Preheat your grill to a high setting.
  2. Drain the cottage cheese (or tofu) and cut it into cubes.
  3. Thread the tofu cubes, bell pepper, beetroot, zucchini, and mulberries onto your skewers. Don’t overload the skewers!
  4. Spray (or drizzle) the fruits and veggies with oil on all sides.
  5. Mix the lemon juice, salt, and pepper; and brush this mixture onto the fruits and veggies after oil application.
  6. Grill the skewers until light char marks appear on all sides.
  7. Brush the skewers with the blueberry barbecue sauce generously.
  8. Grill the sauced skewers for another minute or so. Then, remove the skewers and serve them hot with extra blueberry barbecue sauce on the side.
